Onion Pizza

Ingredients

1 tablespoon extra-virgin olive oil
1 pound onion (4 medium), thinly sliced
1 tablespoon fresh rosemary leaves, or 1 tsp dried
1/4 teaspoon salt
fresh ground pepper to taste
1 recipe Pizza Dough
1/4 cup sliced black olives
2 tablespoons freshly grated Parmesan cheese

Directions:

1. Place the oven rack on the lowest rung. Spray a 12-inch pizza pan or baking sheet with nonstick cooking spray. Preheat the oven to 450°F.

2. In a large nonstick skillet, heat the oil. Add the onions and cook, stirring as needed, until very soft and lightly browned, about 15 minutes. Sprinkle with the rosemary, salt, and pepper.

3. Meanwhile, shape the pizza dough in the prepared pan as directed in the recipe. Spray with nonstick cooking spray.

4. Scatter the onions evenly over the prepared crust. Top evenly with the olives. Bake until lightly browned, 8 minutes, then sprinkle with the cheese. Bake until the cheese melts and the crust is golden brown, 3-5 minutes. Serve immediately.
