Baked Stuffed Shells or Manicotti

Ingredients

8 ounces jumbo shell pasta (28-30 pieces) or manicotti (12-14 pieces)
1 teaspoon olive oil
1/2 small onion, finely chopped
3 ounces lean turkeys ham, finely chopped
1 clove garlic, minced
1 1/2 cups part-skim ricotta cheese
1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
1 cup shredded part-skim mozzarella cheese, divided
1 egg white, slightly beaten
1/2 teaspoon nutmeg
1 (26-ounce) jar low-sodium tomato sauce (about 3 cups)
2 tablespoons grated Parmesan cheese

Directions:

1. Cook the pasta according to package directions, omitting the salt. Drain, rinse well, and place in a large bowl (shells) or a large plate (manicotti).

2. Preheat the oven to 350°F. Spray a 9 x 13-inch baking pan with nonstick cooking spray.

3. Meanwhile, in a small nonstick skillet, heat the oil. Add the onion and ham cook, stirring as needed, until the onion is translucent, about 3 minutes. Add the garlic and cook just until fragrant, about 30 seconds. Let cool.

4. In a large bowl, combine the ricotta, spinach, 1/2 cup mozzarella, egg white, and nutmeg stir in the cooled onion mixture and blend thoroughly.

5. With a small spoon, stuff the pasta shells or manicotti tubes with the ricotta mixture.

6. Spread about 1 cup of the tomato sauce in the prepared baking pan, then arrange the shells or manicotti evenly over the sauce. Top with the remaining sauce, sprinkle with the remaining 1/2 cup mozzarella and the Parmesan cheese, and bake until bubbly, 25-30 minutes.
