Pizza Dough

Ingredients

2 cups bread flour
1 envelope rapid-rise yeast
1/2 teaspoon salt
1 tablespoon olive oil

Directions:

1. Spray a medium bowl and a 12-inch pizza pan or baking sheet with nonstick cooking spray.

2. In a food processor, combine the flour, yeast, and salt pulse to blend.

3. In a glass measuring cup, combine 3/4 cup water and the oil microwave on high until the water is very warm (120-130°F).

4. Turn the food processor on and continue blending the flour mixture with the processor on, gradually pour the warm liquid through the feed tube. Process until the dough forms a ball, about 1 minute, then process 1 minute longer to knead.

5. Transfer the dough to the prepared bowl. Cover with a damp towel and allow to rest for 30 minutes. (The dough can be made ahead, wrapped in plastic, and refrigerated for up to 2 days, or frozen for up to 2 months.)

6. To shape the pizza, place the dough in the center of the prepared pizza pan, flattening it to a disk with the palm of your hand. With your fingertips, push the dough from the center out to the edges, until it is 1/4 inch thick. Then place one hand over the center of the dough and with your other hand, stretch out one side of the dough. Rotate the dough a quarter turn repeat until the dough is fully stretched to its full 12-inch diameter. (If the dough is too springy, cover it with a damp towel and let it rest 10 minutes, then try again.) Spray the dough with nonstick cooking spray before adding toppings to the pizza.
