Monterey Jack Cheese Quiche Squares

Ingredients

3 egg substitute equivalents
1 cup cottage cheese, plus
2 tablespoons cottage cheese
1/4 cup flour, plus
2 tablespoons flour
3/4 teaspoon baking powder
1 cup shredded Monterey Jack cheese
1/2 cup diced green chili
2 tablespoons diced red bell peppers
parsley sprigs

Directions:

1. Preheat the oven to 350°F. Beat egg substitutes and cottage cheese together in a medium bowl for 2 minutes until smooth.

2. Add the flour and baking powder and beat until smooth. Stir in the cheese, green chiles, and red pepper.

3. Coat a square 9-inch pan with nonstick cooking spray and pour in egg mixture. Bake for 30 to 35 minutes until firm.

4. Remove the quiche from the oven and allow to cool for 10 minutes (it will be easier to cut). Cut into squares and transfer to a platter, garnish with parsley sprigs, and serve.
