Chilled Shrimp

Ingredients

5 pounds jumbo shrimp, unshelled
1/4 cup olive oil, plus
2 tablespoons olive oil
4 medium lemons, thinly sliced
3 tablespoons minced garlic
3 medium red onions, thinkly sliced
1/2 cup minced parsley
parsley sprigs

Directions:

1. Peel and devein shrimp, leaving tails intact.

2. Preheat the oven to 400°F. Arrange the shrimp on a baking sheet and brush with 2 Tbsp olive oil. Bake the shrimp for 3 minutes or until they turn bright pink.

3. Place the lemon slices in a large bowl. Add the remaining 1/4 cup of olive oil, garlic, onions, and minced parsley. Add the shrimp and toss vigorously to coat. Cover and let marinate, refrigerated, for 6 to 8 hours.

4. Just before serving, arrange the shrimp on a serving platter. Garnish with parsley sprigs and some of the red onions and lemons from the bowl.
