Tuna and Shrimp Chowder

1/2 cup onion chopped
1/2 cup celery sliced
2 tablespoons butter or margarine
5 cups potatoes diced
2 cups carrots sliced
2 cups water
1 (6 1/2-ounce) can tuna drained and flaked
1 (4 1/4-ounce) can tiny cocktail shrimp drained
1 pint oyster fresh (optional)
4 cups half and half or milk
1 teaspoon salt
1/4 teaspoon white pepper ground
dill weed Minced fresh or fresh parsley


In a large kettle, sauté onion and celery in butter 8 to 10 minutes. Add potatoes, carrots, and water. Bring to boil reduce heat, cover, and simmer 30 minutes, stirring occasionally, until carrots and potatoes are tender.

Add tuna, shrimp, optional oysters (if large, cut in 3 pieces), and half-and-half. Heat through (do not boil). Stir in salt and pepper.

Sprinkle dill or parsley over each serving.

NOTE: If oysters are not available, use a second can of tuna or shrimp if desired.
