Cover broccoli with water, add salt, and bring to boil. Simmer 4 to 5 minutes or until broccoli stalks are barely tender when pierced with sharp pointed knife. Drain, saving cooking liquid to use in soups. Season broccoli in any of the ways listed below.
Buttered Broccoli: Arrange hot broccoli on serving platter. Dot with butter or margarine sprinkle lightly with salt and pepper. Parmesan cheese or crumbled bacon may be added, if desired.
Broccoli with Lemon Sauce: Arrange hot broccoli on serving platter. Blend together 1/4 cup mayonnaise and 1 tablespoon lemon juice. Spoon over broccoli. Dust with paprika.
Broccoli with Buttered Crumbs: Melt 1/4 cup butter or margarine. Toss with 3/4 cup fine dry bread crumbs until evenly mixed. One teaspoon dried mixed herbs may be added, if desired. Spoon crumbs over hot broccoli that has been arranged on serving tray.
