Honey-Glazed Acorn Squash

Ingredients

2 squash acorn
1 tablespoon vegetable oil
1/4 cup butter
1/4 cup honey
1/2 teaspoon salt
1/8 teaspoon black pepper

Directions:

Cut squash lengthwise from stem to base. Scoop out seeds and stringy portions and cut a small slice off bottoms of squash halves so they will sit securely. Brush cut surfaces with oil and arrange cut side down on baking sheet. Bake at 400 degrees F. for 30 minutes. Melt butter (or margarine) and combine with honey (maple-flavored syrup may be substituted). Turn squash cut sides up. Continue to bake until tender, 15 to 20 minutes longer, basting frequently with honey and butter mixture. Season with salt and pepper to taste, and serve with pork sausage links or patties.
Note: These may be baked, covered loosely with plastic wrap, in microwave on full power for 9 to 11 minutes, or until tender, turning once.
