For hotter sauce, add 1/2 finely chopped jalapeno pepper.
2 cups tomatoes chopped
1/2 cup onions chopped
1/2 cup green bell peppers, chopped
2 cloves garlic minced
2 tablespoons parsley chopped
1/2 4-ounce can green chilies, drained and chopped
1 1/2 teaspoons red wine vinegar
Salt to taste
Combine in saucepan tomatoes, onion, green pepper, garlic, parsley, green chilies, vinegar, and salt. Bring to boil. Simmer 30 minutes. Chill. Makes 2 cups.
