1 pound ground beef
1 onion medium, finely chopped
1 clove garlic minced (optional)
3 1/4 cups water
1 8-ounce can tomato sauce
1 6-ounce can tomato paste
2 teaspoons sugar
1 teaspoon oregano crushed
1 teaspoon cumin seed
1 teaspoon chili powder
1/8 teaspoon hot pepper sauce Tabasco
1/4 cup long grain rice uncooked
1 package corn chips, 11 1/2 ounce package
In large skillet cook together ground beef, onion, and garlic until beef loses its color and onion is soft; drain off excess fat. Add remaining ingredients except corn chips; cover and simmer 20 minutes. Serve over corn chips with a variety of garnishes, which may include sour cream, grated Monterey Jack or Cheddar cheese, sliced ripe olives, sliced green onion, diced avocado, and diced green pepper.
