1/2 pound ground beef
1/2 cup long grain rice uncooked
1 onion medium, sliced
1 cup celery sliced
2 carrots, sliced
1/4 pound mushrooms sliced
1 teaspoon salt divided
1/4 teaspoon black pepper
1/2 teaspoon mixed dried herbs, crushed
1 1-pound can tomatoes blended
1/2 cup water
1/2 cup cheddar cheese, shredded (optional)
In large cold skillet, crumble ground beef over bottom. Sprinkle rice over meat, then layer vegetables and seasonings in order given. Add water. Cook, covered, over medium low heat for 30 to 40 minutes or until rice is cooked and vegetables are tender. If desired, sprinkle cheese over top and allow to melt before serving.
