Salmon Loaf With Dill Sauce

Ingredients

1 (16-ounce) can red salmon drained, deboned, and flaked
1/2 cup milk
2 cups bread crumbs soft
2 eggs beaten
1 tablespoon onion grated
2 tablespoons parsley minced fresh
1 tablespoon lemon juice fresh
1/4 teaspoon salt
dash black pepper freshly ground
* Part two.
1 tablespoon butter or margarine
4 teaspoons flour
1 cup milk
1/4 teaspoon salt
1/4 teaspoon dill weed crushed or to taste
1 teaspoon capers chopped (optional)

Directions:

Heat oven to 375° F. Mix salmon, milk, bread crumbs, and eggs. Add onion, parsley, lemon juice, salt, and pepper. Mix well, but do not overmix. Place into greased 8 1/2 x 4 1/2 x 2 1/2 -inch loaf pan. Bake 40 to 45 minutes. Prepare the following sauce.

Dill Sauce:
*In a small saucepan, melt butter or margarine over low heat. Stir in flour until smooth cook 3 minutes. Add milk and stir until thickened. Add salt, dill weed, and optional capers. Serve hot with Salmon Loaf.
