Combine vegetables in large heavy saucepan or Dutch oven. Add oil, seasonings, and water. Cover and cook over low heat for 1 1/2 hours or until all vegetables are tender. Stir occasionally to prevent scorching and to baste vegetables with delicious juices as they collect. Serve hot, cold, or reheated.
