Quick Minestrone

2 cups water
1 3/4 cups cauliflower bite-size pieces
1 1/2 cups ham diced cooked
1 (10 1/2-ounce) can beef broth double-strength
1 (5 1/2-ounce) can tomato juice
1/2 cup celery sliced
1/2 cup carrot sliced
1/2 cup onion diced
1/2 cup green bell pepper diced
2 teaspoons parsley dried
1 (16-ounce) can zucchini
1 (15-ounce) can kidney beans dark red, rinsed and drained
1/2 cup spaghetti broken (about 1 oz.)
1 teaspoon basil dried leaves
3/4 teaspoon garlic salt
1/4 teaspoon oregano dried leaves
dash black pepper
Parmesan cheese Grated


In a 3-quart saucepan, place water, cauliflower, ham, beef broth, tomato juice, celery, carrot, onion, green pepper, and parsley. Bring to a boil over medium-high heat reduce heat to low, cover, and simmer 20 minutes.

Stir in zucchini with liquid, kidney beans, spaghetti, basil, garlic salt, oregano, and pepper. Bring to a boil over medium-high heat reduce heat to low, cover, and simmer 10 to 12 minutes or until spaghetti is tender.

Sprinkle Parmesan cheese over each serving.
