Peel squash and steam until tender. Or bake squash (see directions for Baked Winter Squash, found in this cookbook) until tender scrape tender meat into bowl. Mash cooked squash with butter (or margarine) and season to taste with salt and pepper.
VariationBaked Mashed Squash: Spoon mashed squash into buttered 1-quart baking dish. Dot with 1 tablespoon butter bake at 350 degrees F. for 30 minutes. If desired, casserole may be sprinkled with 1 tablespoon brown sugar and 1/4 cup chopped nuts before baking. Or it may be topped with 1 cup shredded Swiss or Cheddar cheese, then with 1/2 cup buttered bread crumbs before baking.
