German Red Cabbage

1 red cabbage medium size, finely sliced
1 onion large, chopped
3 tablespoons butter
1 bay leaf
4 cloves whole
2 tablespoons cider vinegar
1/2 cup water
4 apples tart, peeled and cut in slices
1 teaspoon salt
1 tablespoon sugar
3 tablespoons dry red wine


Brown the onion in butter, add the cabbage and stir until it is also slightly browned. Add bay leaf, cloves, vinegar, water, apples and salt. Cover and simmer for about 45 minutes, or until the cabbage is tender. Add sugar and wine, then cook 5 minutes longer.
