Spinach Casserole

Serves: 10

   _ 10 1/2-ounce packages spinach thawed
   _ tablespoons unbleached flour
   _ pounds cottage cheese small curd lowfat
   ___ pound sharp cheddar cheese cut in 1/2 -inch cubes
   ___ cup margarine safflower, melted
   _ eggs well-beaten
   ___ teaspoon salt
   Freshly ground pepper to taste
   ___ teaspoon nutmeg ground (optional)


Heat oven to 300° F. Using a sieve, press spinach dry with a spoon. Add flour to cottage cheese; blend well. Combine with remaining ingredients. Bake in 2 greased 8-inch square casseroles for 1 hour.

Note: A 9 x 13-inch baking dish can be used; bake at 325° F for 1 1/4 hours. This recipe can be baked the day before and reheated, or frozen.
