Breakfast Pie

Ingredients

3 eggs, beaten
1/2 cup milk
1/2 teaspoon salt
1 pepper to taste
5 tablespoons butter, melted
3 cups frozen shredded hashbrowns, thawed
1 cup cooked ham, finely chopped
1/2 cup onion, finely chopped
1/2 cup green pepper, chopped
1/4 cup diced pimento, drained
1 cup shredded sharp Cheddar cheese

Directions:

Whisk together eggs, milk, salt and pepper; set aside. Drizzle butter over a 9" pie plate; pat hashbrowns into bottom and up sides to form a crust. Bake at 425 degrees for 25 minutes, or until golden; cool. Sprinkle crust with ham, onion, green pepper, pimento and cheese; top with egg mixture. Reduce heat to 375 degrees; bake for an additional 35 to 40 minutes, until eggs are set. Let stand for 10 minutes before serving.

Tip: Serve up a little whimsy with breakfast! Pour pancake batter into squirt bottles and squeeze the batter directly onto a hot, greased griddle to form hearts, bunnies, cats or your child's favorite animal.
