Ingredients

2 cups all-purpose flour
1/4 teaspoon salt
3 eggs
1 teaspoon vanilla extract
oil for frying
1 cup honey
1 tablespoon sugar
Optional: sprinkles

Directions:

In a large bowl, whisk together flour and salt. Add eggs, one at time, mixing well by hand. Stir in vanilla. Turn dough out onto a lightly floured surface and knead, 5 minutes, until smooth. Divide dough in half and roll out each half to form a 1/4-inch thick rectangle. Cut rectangle into 1/4-inch wide strips and roll each strip into a pencil shape, about 7 inches long. Slice each pencil-shaped roll into 1/4 to 1/2-inch pieces. Add enough oil to a deep skillet to equal 2 inches. Over medium-high heat, fry several pieces of dough at a time until golden. Drain on paper towels; place in a large bowl. Repeat with remaining dough. In a small skillet over low heat, cook honey and sugar together for 5 minutes. Remove from heat and drizzle over fried pieces; stir gently to coat. Remove from bowl with a slotted spoon; arrange on a large platter. Decorate with sprinkles, if desired. Refrigerate until ready to serve.

Begin a Christmas scrapbook and fill it with copies of letters to Santa, wish lists and holiday photos... what fun to read year-after-year.
