Rise 'n Shine Muffins with Creamy Orange Glaze

Ingredients

1 cup Fiber One® cereal
2/3 cup calcium-fortified orange juice
1/3 cup honey
2 tablespoons vegetable oil
1 egg
1 1/2 cups Original Bisquick®
1/2 teaspoon baking soda
1/2 cup plus 2 tablespoons salted shelled sunflower seed, toasted
Creamy Orange Glaze:
1/2 cup powdered sugar
1/2 teaspoon grated orange peel
2-3 teaspoons calcium-fortified orange juice

Directions:

1. Heat oven to 400°. Grease bottoms only of 12 medium muffin cups, 2 ½ x 1 ¼ inches, with shortening, or line with paper baking cups.

2. Place cereal in plastic bag or between sheets of waxed paper crush with rolling pin (or crush cereal in blender or food processor) set aside. Mix orange juice, honey, oil and egg set aside.

3. Mix Bisquick®, cereal, baking soda and ½ cup of the nuts in medium bowl. Make a well in center of cereal mixture stir in orange juice mixture just until moistened. Divide batter evenly among muffin cups. Sprinkle with remaining 2 tablespoons nuts.

4. Bake about 20 minutes or until golden brown. Immediately remove from pan to wire rack (place rack on waxed paper to catch glaze drips). Cool 5 minutes. Drizzle with Creamy Orange Glaze.

Creamy Orange Glaze: Mix all ingredients until thin enough to drizzle.
