I recently purchased your Cook'n Recipe Software and love it! I have tried several other cookbook programs but found them unsatisfactory.

Banana Bread

Serves: 24

1 loaf (24 slices)
Prep: 15 min
Bake: 1 hr 15 min
Cool: 2 hr

   1/2 cup butter or margarine, softened
   1 1/3 cups packed brown sugar
   2 eggs, well beaten
   1 cup very ripe mashed bananas (2 medium)
   1/2 cup buttermilk
   1 teaspoon vanilla extract
   2 cups all-purpose flour
   1 teaspoon baking soda
   1/2 teaspoon salt

1. Heat oven to 350°. Grease bottom only of loaf pan, 8 ½ x 4 ½ x 2 ½ or 9 x 5 x 3 inches, with shortening.

2. Mix butter and brown sugar in large bowl. Stir in eggs until well blended. Stir in bananas, buttermilk and vanilla; mix with spoon until smooth. Stir in flour, baking soda and salt just until moistened. Pour into pan.

3. Bake 1 hour to 1 hour 15 minutes or until golden brown and toothpick inserted in center comes out clean. Cool in pan 10 minutes. Loosen sides of loaf from pan; remove from pan to wire rack. Cool completely, about 2 hours, before slicing.
