_ cups graham cracker crumbs (about 26 squares)
_ 3/4 cups all-purpose flour
_ teaspoons baking soda
___ teaspoon salt
_ cup chopped prunes, dates or raisins
___ cup full-flavor molasses
___ cup vegetable oil
_ eggs
_ cups buttermilk
1. Heat oven to 375°. Grease bottom only of 2 loaf pans, 9 x 5 x 3 inches, or 3 loaf pans, 8 ½ x 4 ½ x 2 ½ inches, with shortening.
2. Mix cracker crumbs, flour, baking soda, salt and prunes in large bowl; set aside. Mix molasses, oil and eggs in medium bowl; stir in buttermilk. Stir molasses mixture into cracker mixture until blended. Pour into pans.
3. Bake 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool in pans 5 minutes. Loosen sides of loaves from pans; remove from pans to wire rack. Cool completely, about 2 hours, before slicing.
