Fruit Parfaits

Ingredients

1/2 cup chopped cantaloupe
1/2 cup chopped strawberries
1/2 cup chopped honeydew melon or kiwifruit
1/2 banana, sliced
1 cup low-fat vanilla yogurt
2 tablespoons sliced almonds, toasted*

Directions:

1. Alternate layers of fruit and yogurt in 2 goblets or parfait glasses, beginning and ending with fruit.

2. Top with almonds.

*To toast nuts, bake uncovered in ungreased shallow pan in 350° oven about 10 minutes, stirring occasionally, until golden brown. Or cook in ungreased heavy skillet over medium-low heat 5 to 7 minutes, stirring frequently until browning begins, then stirring constantly until golden brown.
