This is the best Lemon Cookies recipe on the web!!Prep: 15 min * Bake: 12 min per sheet * Cool: 30 min About 2 1/2 Dozen Cookies _ package Betty Crocker SuperMoist yellow (lemon) cake mix ___ cup shortening ___ cup butter or margarine, softened _ egg _ tub Betty Crocker Whipped or Rich & Creamy lemon ready-to-spread frosting or Lemon Buttercream Frosting (see Fabulous Frostings and Glazes chapter) 1- Heat oven to 375°. Stir half of the cake mix, the shortening, butter and egg in medium bowl until well mixed. Stir in remaining cake mix. 2- Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet. 3- Bake 10 to 12 minutes or until light brown around edges. Cool 1 minute; remove from cookie sheet to wire rack. Cool completely, about 30 minutes. Frost with frosting.
