Crusty on the outside and soft and moist on the inside, popovers are the perfect mate with roasts, beef stew or any meal where there's a little juice to sop.
1 cup all-purpose flour
1 cup milk
1/4 teaspoon salt
2 eggs

1. Heat oven to 450°. Generously grease six 6-ounce custard cups.
2. Mix all ingredients with hand beater just until smooth (do not overbeat). Fill cups about half full. Bake 20 minutes.
3. Reduce oven temperature to 350°. Bake 20 minutes longer. Immediately remove from cups. Serve hot.
