Serving Size: 1 foccacia
The fresh herbs used in the glaze for this bread enlivens the wonderful, homey flavor of this bread. Make this traditional Italian bread the day before you plan on using it and warm before serving.
2 packages active dry yeast
1/4 teaspoon sugar
1 cup warm water
3 cups all-purpose flour
1/4 cup finely chopped onions
3 tablespoons vegetable oil
1 teaspoon salt
Herb Glaze (below)
HERB GLAZE
1 tablespoon chopped fresh or 1/2 teaspoon dried thyme leaves
1 tablespoon chopped fresh or 1/2 teaspoon dried basil leaves
1 egg, beaten
1. Mix yeast, sugar and water in small bowl; let stand 5 minutes.
2. Blend remaining ingredients except Herb Glaze in large bowl; stir in yeast mixture to form a soft dough. Turn dough out onto floured surface. Knead dough 5 minutes until smooth and elastic. Place dough in greased bowl; cover and let rise in warm place 1 hour.
3. Grease baking sheet. Punch dough down; divide evenly into 6 pieces. Shape each piece into 5-inch circle; place on baking sheet. Cover; let rise 20 minutes.
4. Heat oven to 400°. Brush top of each bread with Herb Glaze. Bake 15 to 18 minutes until light golden brown.
For Herb Glaze
Mix all ingredients.
