Rhubarb Bread

Ingredients

1/2 cup butter, softened
1 cup sugar
2 eggs
1/2 teaspoon orange extract
1 1/2 teaspoons dairy sour cream
2 cups sifted flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon nutmeg
1 1/2 cups sliced rhubarb (1/8- to 1/4-inch pieces)
1 cup chopped nuts

Directions:

Cream butter and sugar. Add eggs, one at a time, mixing well after each addition. Blend in orange extract and sour cream. Sift together the dry ingredients and combine with the butter mixture. Stir in rhubarb and nuts. Pour into 1 greased 9x5x3-inch loaf pan (or 2 small loaf pans). Bake at 325° for 1 hour and 20 minutes for the large pan, about 1 hour for smaller pans.
