Flatwillow Colony Zucchini Bread

Ingredients

6 eggs
2 cups oil
4 cups sugar (scant)
3 cups white flour
3 cups whole wheat flour
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon cinnamon
2 teaspoons mace
2 teaspoons nutmeg (or more)
1/2 teaspoon ground cloves (optional)
4 cups peeled, grated zucchini
6 teaspoons vanilla extract
1 1/2 cups chopped nuts

Directions:

Preheat oven to 350°. In your mixer, place the eggs, oil, and sugar and beat well. Add flours, soda, salt, baking powder, spices, zucchini, and vanilla; mix well. Add nuts. Pour batter into 4 greased loaf pans and bake at 350° for 45–50 minutes, or until center springs back.
