Orange Salad with Blackberry Dressing


Serves: 2

Ingredients

2 small oranges, peeled and sliced
4 slices thin onions, separated into rings
2 tablespoons toasted slivered almonds
1/2 cup fresh or frozen (slightly thawed) blackberries
2 tablespoons almond or vegetable oil
1 tablespoon raspberry or white vinegar
1 tablespoon water
1/2 teaspoon sugar
1/8 teaspoon ground nutmeg

Directions:

1. Arrange orange slices on 2 salad plates. Top with onion rings and sprinkle with almonds.
2. Place remaining ingredients in blender. Cover and blend until smooth. Serve dressing with salads.
