Hawaiian Yam Casserole

Ingredients

2 medium sweet potatoes or yams, peeled and cut into 1/2 inch slices (about 2 cups)
1 can (8-ounce) crushed pineapple in juice, undrained
1 tablespoon packed brown sugar
2 tablespoons , chopped pecans
1 tablespoon chopped crystallized ginger
1 teaspoon butter or margarine, softened

Directions:

1. Heat oven to 375°. Spray 1-quart casserole with nonstick cooking spray.
2. Layer potatoes and crushed pineapple in casserole. Sprinkle brown sugar, pecans and crystallized ginger over top dot with butter. Cover and bake about 45 minutes or until potatoes are tender.
