Lemon Curd Parfaits

Ingredients

1/2 cup lemon curd
2 tablespoons orange juice
1 cup whipped cream or frozen whipped topping (thawed)
8 chocolate water cookies
raspberries, if desired

Directions:

1. Mix lemon curd and orange juice in medium bowl. Fold in whipped cream. Coarsely crumble cookies reserve 1 tablespoon crumbs.
2. Layer half of the lemon curd mixture, the cookie crumbs and remaining lemon curd mixture in 2 parfait glasses. Sprinkle with reserved crumbs and top with raspberries.
