Sunflower Nut Oven French Toast

This delicious oven French toast is sweetened with apple juice concentrate. Just scoop it out of the can and use it undiluted-it thaws in seconds as you mix it with other ingredients.


   1 1/2 teaspoons vegetable oil
   2 tablespoons chopped roasted unsalted sunflower seeds
   3 tablespoons unsweetened frozen (thawed) apple juice concentrate
   1/4 cup fat-free cholesterol-free eggs product or 1 egg
   4 slices 12 grain bread or other multigrain bread


1. Heat oven to 450°. Spread oil evenly in jelly roll pan, 15 1/2 X 10 1/2 X 1 inch, in area the size of 4 slices bread. Sprinkle 2 to 3 teaspoons sunflower nuts evenly over oil.
2. Beat apple juice concentrate and egg product with hand beater until blended. Dip bread into egg mixture; place in pan. Drizzle any remaining egg mixture over bread.
Sprinkle remaining sunflower nuts evenly over bread. Bake 10 to 13 minutes or until bottoms are golden brown.
