Jambalaya

You might expect this recipe to make a huge pot of classic Cajun jambalaya, a favorite Louisiana rice dish. In fact, it's the perfect quantity for a hearty meal for two-the only extra you'll need is a bottle of hot sauce for adding at the table!


   4 pork sausage links, cut into bite-size pieces
   1/2 cup uncooked regular long grain rice
   1/4 cup sliced celery
   1/4 cup chopped green bell peppers
   1 small onion, chopped (about 1/4 cup)
   2 cloves garlic, finely chopped
   1 can (13 1/2 ounces) stewed tomatoes
   1 (8-ounce) can tomato sauce
   1/2 cup water
   1 1/2 teaspoons chopped fresh thyme or 1/2 teaspoon dried thyme
   1/8 to 1/4 teaspoon ground red pepper flakes
   1/8 teaspoon salt
   1 bay leaf
   1/2 cup diced fully cooked smoked ham
   Chopped fresh parsley, if desired

1. Cook sausage in 1 1/2-quart saucepan over medium heat, stirring frequently, until brown. Remove sausage and reserve. Drain fat from saucepan, reserving 2 tablespoons in saucepan.
2. Cook rice, celery, bell pepper, onion and garlic in fat in saucepan over medium-high heat about 6 minutes, stirring frequently, until rice is light brown.
3. Stir in tomatoes, tomato sauce, water, thyme, red pepper, salt and bay leaf. Heat to boiling; reduce heat to low. Cover and simmer about 20 minutes, stirring frequently, just until rice is tender.
Stir in sausage and ham. Cover and simmer just until ham is hot. Remove bay leaf. Sprinkle with parsley.
