"I still marvel at how Mama got this meal on the table so quickly after church," she recalls. "Of course, once we smelled the aroma of these foods, dinnertime couldn't come soon enough! "This memorable meal always satisfied our hungry family fast--especially Dad. He'd start eating the salmon cakes as they were coming off the griddle. "Canned salmon, peas, macaroni and cornmeal are economical foods to build a meal around," Imogene adds, "but we always regarded this meal as a treat." Imogene has fond memories of the days when she gave her mother a hand in the kitchen. "Helping in the kitchen was a very special time for Mama and me. We even had fun doing dishes--she'd wash, I'd dry and we'd both sing!" With these easy, economical recipes, Imogene proves you don't need to spend a fortune to serve a tasty meal.
