Cowboy Chicken and Beans

Ingredients

2 cups shredded cooked chicken
1/2 cup barbecue sauce
1 can (15 to 16 ounces) garbanzo beans, rinsed and drained
1 can (15 to 16 ounces) lima beans, rinsed and drained
1 can (15 to 16 ounces) kidney beans, rinsed and drained
1 cup shredded Cheddar cheese (4 ounces)

Directions:

1. Heat oven to 350°. Spray 2-quart casserole with cooking spray. Mix chicken, barbecue sauce and beans in casserole.

2. Bake uncovered 30 to 35 minutes or until hot and bubbly. Sprinkle with cheese. Bake about 5 minutes longer or until cheese is melted.

Let the kids make a zany zucchini cowboy head centerpiece for the table. Slice off one end of a large zucchini, and stand it on a plate. Decorate the top to look like a face, attaching food pieces such as carrot slices, raisins and grapes with toothpicks. Top it off with toy cowboy hat and bandana!
