Peanut Brittle


Serves: 16

Ingredients

2 cups sugar
1 cup light corn syrup
1/2 cup water
1/4 cup butter or margarine
1/2 teaspoon salt
2-3 cups raw or roasted shelled peanuts or other nuts
1-1/2 teaspoons baking soda

Directions:

Combine sugar, corn syrup, water, butter and salt in heavy saucepan. Bring to boil and cook to soft crack stage (275°F), syrup will be golden. Add peanuts and cook (295°F). Stir baking soda in quickly. Pour into buttered baking sheets. Cool break into pieces.
