	Hot German Potato Salad

LOW FAT/LOW CHOLESTEROL/LOW CALORIE

Bake: 1 hr

   1 1/4 pounds new potatoes, cut into 1/2-inch slices
   1/3 cup fat-free Italian salad dressing
   2 tablespoons balsamic vinegar or red wine vinegar
   1 tablespoon finely chopped onions
   1/2 teaspoon salt
   1/8 teaspoon pepper
   1 tablespoon bacon bits
   2 tablespoons fresh parsley, chopped

1. Heat oven to 350°. Spray 1 ½-quart casserole with cooking spray. Layer potato slices in casserole. Mix dressing, vinegar, onion, salt and pepper; pour over potatoes.
Sprinkle with bacon bits.
2. Cover and bake about 1 hour or until potatoes are tender. Gently stir before serving. Sprinkle with parsley.
