Scallion Flower

Serves: 2


2 scallion (or green onions)


Discard the root end of the scallion, and trim any brown edges on the green part. Insert the point of a needle (or a sharp paring knife) 1/2 inch from the root end, and carefully pull up through the scallion. Rotate the scallion slightly and repeat this process. Continue rotating the scallion and making cuts until it resembles a brush. Place the scallions in a bowl of ice water for 5 minutes, or until the scallion begins to curl. Drain well. When ready to use, insert a skewer into the root end of the scallion.
