Once you learn how to make these flowers, you not only will want to use them to garnish a drink but will also find that they can be used to dress up a salad or any meal when a dramatic touch is desired.
2 scallion (or green onions)
Discard the root end of the scallion, and trim any brown edges on the green part. Insert the point of a needle (or a sharp paring knife) 1/2 inch from the root end, and carefully pull up through the scallion. Rotate the scallion slightly and repeat this process. Continue rotating the scallion and making cuts until it resembles a brush. Place the scallions in a bowl of ice water for 5 minutes, or until the scallion begins to curl. Drain well. When ready to use, insert a skewer into the root end of the scallion.
