Feta Fries |

I first had "Greek Fries" in a sandwich shop in Seattle, and the combination of fried potatoes, oregano, lemon, and feta was a mind-altering experience. Here is my attempt to duplicate the sensation.
1 package French fries, frozen potatoes, any shape
1 tablespoon dried oregano
2 tablespoons fresh lemon juice
4 ounces crumbled feta cheese (about 1 cup)
Heat the oven to 450°F. Crumple a sheet of heavy-duty foil, uncrumple it, place on a sheet pan, and scatter the fries on the foil. Bake until browned and crisp, 16 to 18 minutes. Toss with the oregano, lemon juice, and cheese.
