Wild Rice

Ingredients

1 cup uncooked wild rice
2 1/2 cups water
1 1/2 teaspoons salt, divided
4 tablespoons butter
5 tablespoons flour
1 cup chicken broth
1 1/2 cups evaporated milk
2 cups cooked chicken, diced
3/4 cup mushrooms, diced
1/4 cup diced pimiento
1/2 cup sliced green pepper
1/2 cup sliced almonds

Directions:

Cook rice with water and one teaspoon salt. Combine butter, flour, and chicken broth. Simmer over low heat until butter melts. Add milk, 1/2 teaspoon salt, chicken, mushrooms, pimento, and green pepper. Mix. Add rice. Place in buttered casserole dish. Cover with almonds. Bake at 350°, uncovered, 30-40 minutes. Makes a large casserole.
