Cowboy Casserole

Ingredients

1 1/2 pounds ground beef
4 tablespoons oil
2 stalks celery, cut into thin strips
1 slice green bell pepper
3/4 cup chopped onion
1 cup uncooked rice
1 (28-ounce) can chopped tomatoes
2 teaspoons salt
2 teaspoons chili powder
1/2 teaspoon pepper
1 teaspoon Worcestershire sauce
Tabasco sauce to taste
1 cup chopped large black olives
8 ounces Monterey Jack cheese, sliced

Directions:

Brown ground beef in 2 tablespoons oil in skillet; drain. Remove ground beef to 2-quart casserole. Add remaining 2 tablespoons oil, celery, green pepper, onion, and rice to skillet. Cook until rice is browned. Add undrained tomatoes, salt, chili powder, pepper, Worcestershire sauce, Tabasco sauce, and half the olives; mix well. Bring to a boil. Pour over ground beef. Bake, covered, at 325° for 1 hour. Layer remaining olives and cheese over baked layers. Broil for 5 minutes or until cheese is bubbly.
