Whipped Cauliflower

Serves: 6
Total Calories: 70


1 large cauliflower, quartered and cored
1/2 cup non fat milk
2 tablespoons extra virgin olive oil
1 teaspoon kosher salt
1/4 cup flat leaf parsley, chopped


Cut the cauliflower in chunks and roast in a 350 degree oven for 45 minutes.

Cool the cauliflower and puree in a food processor. Add the milk, olive oil and salt and pulse the processor to mix thoroughly.

Garnish with parsley.
