Stuffed Acorn Squash

Ingredients

2 acorn squash, cut in half, seeds removed
1 cup unsweetened applesauce
4 teaspoons brown sugar
1/4 cup dried plum, minced
2 teaspoons freshly squeezed lemon juice
4 teaspoons polyunsaturated margarine
cinnamon

Directions:

Place the acorn squash cut side down in a shallow baking pan. Cover the bottom of the pan with water and bake for one hour at 400 degrees. Cool.

Fill the squash with applesauce, plums, brown sugar and lemon juice. Top with each one with a tablespoon of margarine. Bake for 10 to 15 minutes until the applesauce is bubbly.
