Creamed Turnips


Serves: 6

Ingredients

1 pound turnips, cleaned and peeled
1 cup water
1 teaspoon kosher salt
2 tablespoons flour
1/2 cup skim milk
1/8 teaspoon freshly ground black pepper
1 teaspoon grated orange peel
1/2 cup chopped flat leaf parsley

Directions:

Slice the turnips into 1/8-inch slices and heat in the water and ½ teaspoon of the salt in a large saucepan over high heat until boiling. Reduce the heat, cover and cook for 10 minutes until the turnips are fork tender.

Drain the turnips, reserving ½ cup of the liquid.

In a medium saucepan, stir the skim milk and flour until well-mixed. Add the reserved liquid and cook over medium heat, stirring constantly until thickened. Stir in the orange peel and turnips and pour into a serving dish. Sprinkle with the parsley.
