Bulgar Pilaf

Ingredients

1 cup cracked bulgur wheat
1/4 cup polyunsaturated margarine
1 teaspoon kosher salt
1/4 teaspoon frehsly ground black pepper
2 1/2 cups low salt chicken stock
1 (6-ounce) can tomato paste
low fat Greek yogurt

Directions:

Melt the margarine in a large saucepan and sauté the bulgar wheat with the salt and pepper until lightly browned. Add the tomato paste and chicken stock and bring to a broil. Cover and reduce the heat. Simmer for 30 minutes until the wheat is tender and all the liquid is absorbed. Let stand for 15 minutes before serving.

Serve with the yogurt.
