Baked Stuffed Potatoes

Ingredients

6 large Idaho potatoes
3/4 cup liquid egg substitute
4 tablespoons skim milk
3/4 cup polyunsaturated margarine
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon paprika
3 tablespoons grated asiago low fat cheese

Directions:

Spear the potatoes with a fork, microwave the potatoes for 5 minutes at full power and let cool.

Cut the potatoes in half and scoop out the pulp into a blender. Reserve the shells.

Add the egg substitute, skim milk, margarine, salt and pepper and whip until smooth. Fill the shells with the whipped potato mixture, sprinkle with paprika and cheese and bake for 30 minutes at 350 degrees until the cheese is brown.
