Home Fried Potatoes

Ingredients

2 medium baking potatoes
2 tablespoons polyunsaturated oil
1 medium white onion, diced
1/2 teaspoon paprika
1 teaspoon kosher salt
2 tablespoons chopped chives

Directions:

Pierce the potatoes several times with a fork and microwave at high heat for 4 minutes. Cool and cut into1/4 inch dice.

In a bowl, mix the potatoes and oil until all the pieces are coated. Sauté the potatoes in a skillet over medium high heat until browned, about 10 minutes. Stir in the onions, reduce the heat to medium and sauté until the onions are translucent, about 10 minutes. Stir in the paprika and salt. Garnish with chives and serve hot.
