Tomatoes Rockefeller

2 large ripe tomatoes, cut in half
1 1/2 tablespoons finely chopped onions
1 1/2 tablespoons chopped flat leaf parsley
1 1/2 tablespoons polyunsaturated margarine
1/2 cup frozen spinach, drained and chopped
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/2 teaspoon paprika
2 tablespoons panko


Place the tomatoes in a shallow baking pan, cut side up. Mix the onion, parsley, margarine, spinach, salt, pepper and paprika and spread evenly over the tomatoes. Top with the panko. Bake for 15 minutes at 375 degrees until the panko is toasted.
