Risotto Milanese

1/2 finely chopped onion
3 tablespoons polyunsaturated oil
2 cups uncooked long grain rice
pinch saffron
2 cups chicken broth
1/4 teaspoon kosher salt


Sauté the onion in the oil until golden. Add the rice and saffron and cook stirring until the rice is translucent. Cover the rice with the chicken broth, sprinkle with salt and simmer for 25 minutes, stirring occasionally, until the rice absorbs the liquid.
